See the Enterprise going to warp on the movie posters.....
Star Trek fans call it a rainbow effect due to the many colors created by the warp effect.
Therefore the color is rainbow.
This effect was changed for the new film, replaced by it's here, then it's gone, followed by a "sonic boom" sound.
Granted the second one makes a heck of a lot more logic then the ship & stars being distorted.

* Then again we don't have a real life example of this so how do we know what it'd look like anyway ? *
